The idea behind Yayoi is simple: smaller portions, more variety. The collection moves away from the traditional large plate, where the protein, side dish and sauce are all served together. With Yayoi, dishes can be served as several separate elements, giving chefs more ways to present their food and guests a more varied dining experience.
